Coming from an ancient recipe of Biellese shepherds, Cervo Maccagno is a cheese made of pure Piedmontese milk, coming from select breeders of the territory. It differs from other traditional production because the milk is processed raw without any heating. The special processing and the seasoning on pinewood boards enhances the characteristic flavour and taste, giving the cheese all the scent and aroma of the herbs and flowers growing on the pastures where the native breeds graze.
