Stravecchio is a seasoned “Toma” aged on pinewood planks in traditional cellars. The lengthy seasoning carefully controlled piece by piece, yields a cheese with an elastic base which is characterized by widespread small holes and a pleasantly intense flavour with an aromatic taste and scent.
