The rounded rind is obtained using a special mold that gives it a unique appearance, making it the perfect ambassador for Piedmont’s cheese-making tradition. Washing the rind in water and salt is a fundamental step that adds value to each individual wheel.

To appreciate all its qualities, it should be tasted at room temperature, paired with a Piedmontese red wine, such as a Gattinara, for a full-flavored aperitif. Toma Contadina cheese is also excellent for creaming risotto, making every bite stringy and flavorful.
