Toma D.O.P. Piemonte
All the rules laid down by the relevant consortium regarding both the production and the maturing are respected.
We also choose to make our Toma DOP Piemonte following the traditional procedure (in cauldrons) as we consider this the best way to bring out the characteristics of a true TOMA.
Ingredients: milk – rennet – salt
Size: around 3 or 7 kg
Paste: white or with a light yellowish tint depending on the season in which it is produced
Flavour: distinctive toma taste
Maturing period: over 60 days
