Produced with 100% Italian milk, this cheese distinguishes itself for its chalky texture and its versatility. The name Lunatico perfectly reflects the different phases in which it can be tasted, just like the moon has lunar phases, even our Lunatico changes during the length of the seasoning phase. After a long rest on pinewood boards, the cheese presents itself more chalky towards the centre and softer closer to the rind. This peculiarity gives the taster the chance to discover new aromas and special scents.
