For its cheese Botalla uses exclusively organic milk produced from local dairy farms in Piedmont raising local native breeds. It is a highly sustainable method of producing milk, in perfect equilibrium with the environment and with forage production achieved through a controlled certified supply chain.

The processing of the “raw” milk for the cheese follows the rules of tradition, thus transferring into the cheese all the scents of the pastures and forage of our territory. A unique organic cheese that respects the environment and brings to the table all of the flavour of excellent Piemontese milk.

CONTROLLED FROM THE FIELDS TO THE TABLE

When ready the cheese ages in the historic Botalla cellars on pinewood boards. It is checked daily by our experts who verify the perfect state of aging before packaging by hand every single form of cheese bringing to the table all of the quality of cheese Made in Italy.

A truly organic aged cheese, of a yellowish-white hue and minute eyes. A delicate flavour and soft compact consistency ready to be tasted with glass of white wine or combined with sauces and jam, like “Cugnà”, a typical Piedmontese sauce made of grape must.
